Summer is here and in a big way! We have finally made it to consistent high 80’s and 90’s, which after a recent trip to Phoenix I am actually feeling grateful for. I am definitely a person who enjoys avoiding the heat, but I do have a love for a lot of summer activities. So, I decided to write another checklist. I had a lot of fun writing my spring checklist. It was really great considering ways to celebrate the season.

Here is my list to help you squeeze the most out of your summer!

  • Go on lots of walks with my pup, Willow (Especially now that she isn’t a fool on her leash all the time thanks to Scotch Pines Dog Training!!)
  • Eat all the ice cream
  • See the fireworks show at Snake River Landing
  • Go listen to the live music happening outdoors all summer ( My favorite is the Live United concert series)
  • Shave ice ( I really dig the Tiki Hut off of 25th)
  • Try something new ( I’m taking Hip Hop and Latin classes with Kenia at Motion Dance Academy 🙂 )
  • Ride my bike everrrrrywhere
  • Go on a hike (Last year we went up around the Palisades area)
  • Go camping
  • Make some of my go to summer recipes

Mexican Street Corn Nachos

Knock Ya Naked Margaritas That’s what my mom calls them! 😂 We sub the water for 7-up and it gives it a lil somethin extra.

I hope you all have an incredible summer and make tons of memories!

I got to mark “ice cream shop” off my Idaho Falls downtown wish list this last week.

We have a local ice cream shop now! I am so excited. Downtown is the perfect place for an ice cream shop, and I can’t wait to add Pop’s to all of my summer time routines.

Rating: (on a 0-5 scale, 0 not so great-5 Poppin’)

Over-all Tastiness: 5

Atmosphere: 5

Experience: 5

Taste

Pop’s offers a wide spectrum of flavors, so whether you want to play it safe with a classic flavor (rocky road/ bubblegum) or try something new you can find something that you’ll enjoy. They also have Italian ices that will satisfy your cravings and are dairy-free and vegan-friendly.

When I was there I tried the Lime Rickey (one of my favorites)! It was perfect.

Atmosphere

Pop’s has a really sweet retro vibe to it. The first thing you notice is the bright pink walls. It’s very fun, and the black and white photos are a great touch providing some nostalgia.

Experience

Absolutely wonderful. The owners, Jennifer and Steve, are very friendly and helpful. They also own Idaho Escape Rooms (check out my review) downtown. Which would be a perfect activity to pair with your ice cream.

Couple of new Pop’s fans

I’m very happy to have this great new addition to Idaho Falls. Be sure to check it out on your next bike ride or visit to downtown!

After a grueling five hour staff meeting at work, I needed some fuel. And for some casual healthy lunch the best option is Wild Root Cafe on 8th St. in Boise.

The staff is friendly, the decor is beautiful, and the food is like nowhere else!

I recommend the Indian “Nacho” Flatbread (which is a wrap you can carry to go), the Market Melt (which changes seasonally. I got the cardamom pear with brie), or the PB&B (peanut butter and banana with fresh local peanut butter from City Peanut).

They also have a selection of fresh squeezed juices and kombucha from Idaho Kombucha Co.

Wild Root Cafe is a must if you want to eat locally and eat well!

PV's Uncorked on Main

I really enjoy PV’s Uncorked on Main. For one, PV’s literally stands for exactly what I am about…PASTA and VINO. If I had a spirit animal or more like a pair of spirit animals they would be pasta and wine. That is how strongly I feel!

I ended up at PV’s the other night as part of a girl’s night adventure, which would be a total waste without a nice glass (or two) of wine. We went to the Vagina Monologue’s in Pocatello at the Elk’s Lodge. The Family Service Alliance puts an event together annually which is always hilarious, raunchy and moving. I love it. If you haven’t gone be sure to check it out next year!

It was a great night and it inspired me to share this location with ya’lls.

Things that I love about PV’s:

ATMOSPHERE

The atmosphere is something that is immediately noticeable at PV’s. When you walk in the décor is just lovely!

BEAUTIFUL FOOD

Food presentation is one of my favorite things about food blogging. Part of this blog experience has helped me to realize the effort that goes into plating. This antipasto looked so fantastic. Not to mention it tasted good too! I have also tried pizza and pasta at PV’s and have not been disappointed!

WINE, WINE AND MORE WINE

I love my self some wine. Red, whites…I ain’t picky. I like em all! The last time I was at PV’s I had a nice Cabernet Sauvignon. If you like to try different wines check out one of the wine tastings that PV’s hosts monthly.
